Posting what should be a summer recipe during the winter. I’ve been wanting to post this recipe for some time now, but the months passed by and when I finally got the chance to post it, it’s February but that’s ok because people eat ice cream during the winter, so why can’t they eat a peach cobbler? :)

This Brown Butter Peach cobbler is layered with peaches (I used fresh but canned will work as well), vanilla, cinnamon, cardamom, thyme (for that little unexpected but very pleasant taste) and brown sugar to. The peaches stay juicy, while the topping is soft and the edges are crisp. It’s all about texture and taste with this one!

Top with vanilla ice cream OR Mascarpone. MMMM
