Pistachio Crusted Salmon with Basil Sauce

A simple pistachio crust takes this salmon from everyday delicious to special enough for guests— the best part about it is that it takes less than 30 minutes to make!

That’s what I love about salmon, no matter how exquisite the dish, it is so quick and easy to make. It truly makes the perfect weeknight dinner

Pistachio Crusted Salmon with Basil Sauce

Ingredients

  • Salmon

  • Pistachios, chopped

  • fresh rosemary

  • fresh thyme

  • Lemon

  • S&P

  • garlic powder

  • red chili pepper

  • Olive Oil

  • honey

Basil Sauce

  • fresh basil

  • fresh parsley

  • garlic cloves

  • lemon juice

  • s& p

  • red chili flakes

Instructions

  1. Preheat oven to 375.

  2. Chop the rosemary and thyme, place in a bowl and add the rest of the seasonings. Stir together then add the chopped pistachios. Place aside

  3. Pat dry the salmon fillet and place in a baking dish lined with parchment paper. Rub olive oil on salmon then spoon the pistachio mixture on top of the salmon.

  4. Bake for 12-15 min (time depends on how big the salmon is)

  5. While the fish is cooking, make the basil sauce; in a food processor, add garlic cloves, parsley, basil, olive oil, lemon, S&P and red chili flakes. Process until smooth.

  6. Once the Salmon is baked, top with red cherry tomatoes, basil, lemon and basil sauce.

  7. Enjoy!
